Pressure Cooker Shrimp Scampi Paella

  • 1 lb frozen shrimp, 16-20 count shell on, uncooked (must be frozen – do not defrost or use precooked shrimp)
  • 1 cup jasmine rice
  • ¼ cup butter
  • ¼ cup fresh parsley, chopped
  • 1 tsp sea salt
  • ¼ tsp black pepper
  • 1 pinch crushed red pepper or cayenne pepper (to taste)
  • 1 medium lemon, juiced
  • 1 pinch saffron
  • 1 ½ cups water or chicken broth
  • 4 cloves garlic, minced or pressed

Optional Garnishes

  • Butter
  • Grated hard cheese (parmesan, romano, asiago)
  • Chopped fresh parsley
  • Fresh lemon juice


  1. Combine all ingredients in a pressure cooker, layering the frozen shell-on shrimp on the top.
  2. Secure lid and cook under high pressure for 5 minutes.
  3. Quickly depressurize.
  4. The paella can be served with the shells on or, if desired, gently remove cooked shrimp from the rice, then peel. 
  5. Add peeled shrimp back to the rice and serve.


  • If using a 14 oz. can of chicken broth, increase the rice amount to 1 ¼ cups.
  • Dried parsley can be used in place of fresh.
  • Extra fresh lemon can be served as a garnish for extra lemon flavor.
