Pressure Cooker Shrimp Scampi Paella

Ingredients
- 1 lb frozen shrimp, 16-20 count shell on, uncooked (must be frozen – do not defrost or use precooked shrimp)
- 1 cup jasmine rice
- ¼ cup butter
- ¼ cup fresh parsley, chopped
- 1 tsp sea salt
- ¼ tsp black pepper
- 1 pinch crushed red pepper or cayenne pepper (to taste)
- 1 medium lemon, juiced
- 1 pinch saffron
- 1 ½ cups water or chicken broth
- 4 cloves garlic, minced or pressed
Optional Garnishes
- Butter
- Grated hard cheese (parmesan, romano, asiago)
- Chopped fresh parsley
- Fresh lemon juice
Directions
- Combine all ingredients in a pressure cooker, layering the frozen shell-on shrimp on the top.
- Secure lid and cook under high pressure for 5 minutes.
- Quickly depressurize.
- The paella can be served with the shells on or, if desired, gently remove cooked shrimp from the rice, then peel.
- Add peeled shrimp back to the rice and serve.
Notes
- If using a 14 oz. can of chicken broth, increase the rice amount to 1 ¼ cups.
- Dried parsley can be used in place of fresh.
- Extra fresh lemon can be served as a garnish for extra lemon flavor.
